This is so simple it's silly, yet it is special enough for company. When the weather and grill starts heating up, this is a great go-to recipe for whatever meat (or non-meat) you want.
My friend Gretchen shared this recipe with me years ago when we had a big group together staying at an AirBnB. It's easy to grab some chicken breasts and top them with the bruschetta and take that chicken from basic and boring to fresh and delicious without many ingredients or much work.
Bruschetta
1/2 C. Olive Oil
1/4 C. Balsamic Vinegar
3 Cloves Garlic, minced
1/2 C. chopped Fresh Basil
1/2-3/4 C. chopped Tomatoes (I like to use the grape tomatoes)
Salt & Pepper to taste
Mozzarella Balls (optional, but awesome)
Serve over grilled chicken, steak or bread or with pita chips.
