Super easy, low carb and has a fun name.
It is what it is...an egg roll without the wrapper in a bowl.
1 lb. ground beef or turkey
1 red pepper, julinned
16 oz. pkg. coleslaw
5 garlic cloves
1/4 C. soy sauce
In a large pan brown meat. Next, add in garlic, red pepper and coleslaw. Saute with meat for 2-3 minutes. Add soy sauce and saute 2-3 more minutes. Serve warm and with sriracha, green onion, sesame seeds, chow mein noodles, a little Japanese mayo or whatever other toppings you like.
This is a super quick and easy meal. My only complaint is that sometimes it can leave me a little hungry. Maybe I'm just used to feeling more full from carbs? I guess that just leaves room for dessert. :)
