Somehow I forget about these less-guilt treats and love them (maybe a little too much) every time I make them. The perfect kid or adult snack to have on hand in the fridge or to throw in your lunch box. It's also an awesome no-cook recipe for the kids to make themselves and get a little protein in their growing bodies.
2/3 C creamy peanut butter
1/2 C chocolate chips (we like the dark kind best)
1 C old fashioned oats
1/2 C ground flax seed
2 Tbl. honey
Combine all five ingredients in a bowl and stir to combine. Place in the refrigerator 15-30 minutes so they are easier to roll. Roll into ~12 bites and store in the fridge for up to a week (they'll never last that long).
Totally forget too! Will be making these over the weekend.
