What are you doing with all of the leftover meat from whatever you grilled up for dinner last night? Our go-to is always an easy fried rice. A little leftover steak, chicken, shrimp, or our favorite, pork tenderloin, and you have another awesome meal. Also- pretty much any leftover vegetable too! Think zucchini, broccoli, carrots, green beans, etc. etc.
I think the key to making it taste like authentic take out is the sesame oil. It's also good if you can use day old rice or cook yours in the morning and let it refrigerate until you are ready. No biggie, but it makes mealtime really fast too!
Toss In Your Leftovers Fried Rice
3 C. cooked white rice
2 Tbl. sesame oil
1 small white onion, chopped
1 C. frozen peas and carrots, thawed
2-3 Tbl. soy sauce
2-3 eggs, lightly beaten
2 Tbl. chopped green onions
leftover protein such as pork, beef, chicken or shrimp, diced
leftover veggies- green beans, zucchini, broccoli- you name it!
mushrooms (optional)
bamboo shoots (optional)
sriracha (optional)
Preheat a large skillet or wok to medium high heat. Pour sesame oil in the bottom and add the onion, peas and carrots and fry until tender (add in mushrooms if you like). Toss in the leftover meat. Slide the onion, meat and veggie mixture to the side of the pan and pour in the eggs on the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs in with everything else. Add in the cold rice and mix in. Pour the soy sauce on top. Stir and fry everything until heated through and combined. Don't be afraid to really let it fry up and get a little char on it- the more the better! Top with chopped green onions and serve with Sriracha and extra soy sauce. Enjoy!!
