My friend Gretchen brought this to a summer BBQ 10 years ago and since that day it has become my go-to appetizer in the nice weather months. Not only does it make me look like someone who is effortlessly a little fancy and cares about healthy, fresh food, but also it’s delicious enough I might just get caught sticking my head in the bowl by the end of the party. A little classy, a little sassy, just the way I like it.
Hummus Dip by Gretchen Thompson
1 Tub of Hummus (I like the plain)
1 Cucumber, peeled and chopped
2 Vine Ripened Tomatoes, copped
½-¾ C. Feta Cheese
2 Tbl. Olive Oil
1 tsp. Garlic Powder
1 pinch Dried Basil
1 pinch Dried Oregano
Put hummus in the bottom of a pan (I use a pretty pie plate). Mix cucumber, tomato, feta, seasonings and olive oil in a bowl. Pour over hummus and refrigerate for 30 minutes. Serve with pita chips of your choice. (Also, let it be known, I am not a big hummus fan, but somehow mix it up with feta cheese and these seasonings and you got me.)
