Easy, Oven Baked Lemon Pepper Tilapia Recipe

Your new weeknight go-to recipe has just arrived.
I have loved this recipe and it has been in regular rotation for 15 plus years now. My friend Karen introduced me to this recipe and shared it with me after I couldn't stop obsessing over it when she made it for lunch at a playdate with our babies. That's right, it's so easy she freaking whipped this up for a lunch WHEN WE HAD BABIES!
It feels a little elevated and maybe fancy, but I always have all the ingredients on hand and am always trying to work more fish into our diets so this is just a winner in my book.

Oven Baked Lemon Pepper Tilapia
Ingredients:
Tilapia, frozen (I get mine in the Costco freezer section)
EVOO
Butter
Salt
Pepper
Fresh Dill (I almost always use dried, but obvi fresh is better)
Lemon Pepper seasoning
Plain or Italian Bread Crumbs (optional, but recommended)
Lemon Slices
Directions:
Preheat oven to 400 degrees.
Get aluminum foil squares for each piece of fish you are cooking. Remove frozen fillets from packaging (no thawing required). Put olive oil under and on top of each piece of fish. Add the above items topping with lemon. There is no specific amount for each ingredient, it just depends on what you like.
Seal the foil packets and bake at 400 degrees for 35-40 minutes until fish is flaky.

We like to serve ours with white rice and a fresh vegetable, usually broccoli or asparagus. There will lots of yummy, buttery sauce in the fish packet that you can pour on top of the fish and/or your rice and veggies.
I have one kiddo that likes to eat in the aluminum foil packet and the rest of us remove it before we eat and spread all that sauce around!
