I tip my fascinator (those fancy British hats) to our friends across the pond for this little delight. I also tip it to our friends who attended the London Summer Olympics in 2012 and brought this recipe back to us in Utah as a delicious souvenir. The Pimm's No. 1 Fruit Cup is the "Official Drink of Wimbeldon" and became the "Official Drink of our Backyard" in 2013. It is so light and refreshing and different than most other cocktails. It does, however, require a new bottle of liquor in your cabinet (it is a gin-infused with herbal botanicals, caramelized orange and spices) but is absolutely worth the shelf space and giving this a stir and a sip. Plus you end each drink with a delicious little fruit cup snack.
Pimm's No. 1 Fruit Cup
Dice any combination of fresh, ripe fruit and mix together in a bowl:
Strawberries
Blueberries
Apple
Orange
Lemon
Grapes
Cucumber (this is a must)
Mint (another must)
Add ice to a cocktail glass, fill with:
1/3 full with Pimm's No. 1
Top with Sprite or Ginger Ale
Stir in two spoonfuls of the fruit mixture
Drink and repeat all afternoon!
