I had heard it before, but never fully embraced it, that pre-cooked bacon is actually really great. I wish I would've given it more of a try a few years ago because I have a bacon-loving child who I would love to get some protein in his growing little body before school everyday, but time doesn't always allow for the whole pan and cooking thing and then there is the smell. When I've already showered and have my perfume on and am ready for my day, I hate to coat myself in a cooked meat smell right out of the gate. Enter pre-cooked bacon.
My friend Gretti introduced all of us to it on a recent multi-family vacation. She got the big ol' bag of it from Costco. We were all leery until we tried it. The sounds coming from the kitchen of each of us trying it and loving it were enough for me to know, we had to babble about it.
This is the exact one she got from Costco's refrigerated section (and the exact one I ran home to buy myself).
I then talked to my friend who has worked in the pork industry for over 20 years (you don't have a Pork Princess in your life?!) and gave my rave review of the pre-cooked bacon. She told me you can easily make yours at home as well if you don't want to have a giant Costco bag at the ready in your fridge. Here is how to do it:
Lay the bacon out on a sheet pan. You could line it with foil or place on a baking mat (that’s what we do). Set oven to 350 degrees and then, depending on the thickness of the bacon and how you want it done, I would say 15-20 minutes. Then I take it out, lay it on a plate with a paper towel to sop up some of the grease, (be careful not to sop up too much of the grease, that’s where the flavor is) and then let it cool. I just throw it in a ziplock baggie and put it in the fridge. Take out what you need for sandwiches, etc. rewarm it on a pan quick or in the microwave or just eat it cold!
Now you can bring home the bacon AND fry it up in the microwave yourself!
