Why Romesco Salsa is a Must Have Summer Recipe

Wow your family the next time the hubs is grilling up steak! I wasn’t familiar with a romesco until my friend Meghan had some of girls over for dinner and served it over steak. It was such a surprising delight- delish AND gorgeous! 😍


I loved grilling in the summer, but it can get boring kind of fast. This is such a colorful way to excite your eyes and tastebuds, served over steak or any other meat of your choice.



Romesco Salsa:

• 1 Tbl olive oil

• 1/2 C. chopped roasted almonds (or raw that you toast yourself over the stove)

• 1 C. chopped cherry tomatoes

• 1 C. jarred roasted red peppers, drained and chopped

• 1 Tbl. red wine vinegar

• 1/4 C. chopped fresh parsley

• 2 garlic cloves, minced

• 1/4 tsp. paprika

• 1/4 tsp. kosher salt

• pepper to taste


While your meat grills, combine all ingredients except the almonds in a bowl. Toss and set aside. 🍅
